Enzyme catalysed and synthesis of novel carbohydrates

Synthesis and hydrolysis reactions catalysed by hydrolytic enzymes and transferases are studied and enzyme catalysed processes for carbohydrate ester synthesis and production of cyclodextrins are developed. Production, purification and characterization of enzymes is an important part of the research. New amylolytic enzymes (cyclodextrin glycosyl transferases, product specific amylases and isoamylases) from bacterial sources have been identified and investigated.
