Electrokinetic characterization of whey protein separation

Resumé

Cross flow filtration of whey protein has been performed on 3 different membranes. The rejections have been determined by HPLC analysis of the feed and permeate. The pure membranes as well as the fouled membranes have been characterized by measurements of the streaming potential along the membrane surface. A critical evaluation of the techniques for measuring membrane surface potential will be given as will a description of the relationship between the observed reflection coefficients and the observed streaming potentials
