Abstract

Salting-out data of (NH4)2S04 on beta- and k-casein aqueous solutions are reported in an
alkaline range of plf. Solubility appears to depend on the initial protein concentration in
a range of pH and ionic strength. Experimental resuIts are successfully interpreted in
terrms of protein hydrophobicity and charge.
